A new book about the Tarte Tatin was published in late 2011 by French historian Henri Delétang who, has spent decades researching the history of the tarte. You may need to bone up on your French since it is only available "en français", but it is well worth the effort. "La Tarte Tatin - Histoire et Légendes" is a richly illustrated narrative of how the famous tarte came into being in the little town of Lamotte-Beuvron in the late 19th century.
